Ingredients
2 Cups of Egg Beaters (I Used Southwest because it is all I had)
1/2cup Fat Free cottage cheese
1/2 cup Fat Free cheddar cheese
Cooking spray
Preparation
Preheat oven to 300 degrees
Put egg beaters, cottage cheese and any spices you may wish into blender.
Blend until smooth
Spray a nonstick muffin pan generously with nonstick cooking spray.
Equally distribute mixture into 12 muffin tins sprinkle tops with shredded cheese
Place a 9x13-inch metal or ceramic baking dish on the lower rack of oven and fill it halfway with the boiling water from the kettle. This will create steam in the oven, which will help the egg bites to cook gently and attain a custardy texture.
Bake 20-25min or until set
Let cool in pan for 5min before removing
Store in airtight container in fridge
Feel free to add whatever veggies or meats you like! I love to add turkey sausage crumbles when I have them handy.
