About the Recipe
I LOVE red velvet anything! But unfortunately, traditional red velvet items are high in fat and sugar sugar with very little protein. Enter my favorite moist red velvet mini cupcakes!

Ingredients
1 package Duncan Hines Perfectly Moist Red Velvet Cake Mix
3/4 Cup Vanilla Greek Yogurt
1Cup of Vanilla Core Power Elite Protein Shake
Toppings of choice (not counted in nutrition) - Rediwhip or Whipped Cream Cheese
Preparation
Preheat oven to 350
Prepare mini oven tin with cooking spray of choice
Combine together entire box of dry cake mix, 3/4 cup of vanilla greek yogurt, and 1 cup of vanilla core power protein shake
Mix until smooth
Scoop out evenly into mini muffin tins (I used a Tablespoon to scoop mine out evenly)
Bake 9-13min or until toothpick comes out clean
Store in airtight container in refrigerator
You can top with rediwhip or whipped cream cheese for added goodness, but factor in the added calories as well :)
